I am passing on my absolute favorite recipe to you with this one – this recipe can heal all that ails you! I tasted something like this once in a restaurant, and went to work right away to recreate it. I think it turned out better than the original. I make a big pot of this soup once a week and it is good for at least 10 to 14 meals. My girls and husband will have it for breakfast every morning. I encourage everyone to think outside the box – soup can make a very satisfying and sustaining breakfast if it is prepared correctly. And the great thing about it, no one in my family, including me, ever seems to get tired of it.
Starting off your day with a nutrient-dense breakfast will keep your mind sharp. This is important for doing well in school and staying focused at work. And the need for a mid-morning snack goes away. My clients tell me they can go easily 4-5 hours after consuming this soup without becoming hungry! What a great way to feed your body and soul!
Sausage, Potato and Kale Soup
(Serves 10 – 14 Meals)
Ingredients:
- 3-4 moderately sized potatoes, cut into small cubes (alt. cauliflower broken into florets, if you are watching your carbs)
- 1-2 bunches of kale, cut off the rib, and coarsely chopped
- 1 large onion
- 1 package of pastured country style pork sausage
- 1/2 package of pastured spicy sausage
- 3 quarts of your homemade chicken stock
- 1 quart of Kalona Super Natural® heavy whipping cream, the secret ingredient!
Directions:
Cook the sausage and the onion together in a large soup pan.
Add the potatoes (cauliflower) and the chicken stock and cook for 5 minutes at a low boil.
Add the kale, simmer until tender.
Add the cream. Do not boil after the cream is added.
Eat!
