I first tried this version of mashed potatoes at a local restaurant. My girls couldn’t believe how delicious they were and would always ask to go back there to eat more! I didn’t have their recipe but decided I could make my own version since my garden is chock full of horseradish root. And as it turns out, I like my own recipe even better!

And, have I mentioned the health benefits of horseradish? It is a potent herb that has been used for thousands of years. It has antibiotic, antibacterial and antifungal properties. Being from the cruciferous family (broccoli, cauliflower, Brussels sprouts, etc.) it has high levels of plant chemicals called glucosinolates, which have anticancer properties especially for lung and colon cancers. There are so many benefits to adding horseradish into your diet that I should write an article on it! Look for it in the future!

Horseradish Mashed Potatoes

(Serves 8)

Ingredients:

  • 4 lbs. potatoes
  • 1 1/2 cups organic, whole fat, plain yogurt
  • 1/2 stick organic butter
  • 2-4 tbsp. fresh grated horseradish. If you love horseradish add more! You will find it at a well stocked grocer, or farmers market
  • Real Salt® and black pepper, to taste
  • Parsley

Directions:

Wash, peel and cut potatoes into cubes, boil in salted water until soft enough to pierce with a fork.

Drain and put into a large bowl, add all the ingredients and mash and mix together till creamy. You can add more horseradish if you like it pungent and a bit more yogurt if you like your potatoes extra creamy.

Sprinkle chopped parsley on top and serve immediately.
