Sometimes we just need some comfort food, and mashed potatoes are the ultimate comfort food, right? But what if you are watching sugar intake? Remember potatoes are high in sugar — one moderately sized potato has as much sugar as a 1/4 cup of white sugar! A really tasty potato substitute is cooked, mashed cauliflower. This recipe is easy to make and, because it has a decent amount of fat in it, is very satisfying.
Cauliflower Mashed Potatoes (low carb)
(Serves 4)
Ingredients:
- 1 head cauliflower
- 1/3 cup grated Parmesan cheese
- 2 tbsp butter, or more to taste
- 1/3 cup chopped onion
- 4 strips organic bacon cooked crispy, or use 1/4 lb ground sausage
Directions:
In a pan fry bacon (or brown sausage) and chopped onions together until done. Cover and set aside.
Steam cauliflower until soft.
Mash cauliflower until smooth with a potato masher, or use potato ricer.
Add butter and Parmesan cheese along with onions and bacon (or sausage) mixture into mashed cauliflower.
Salt and pepper to taste.
Mix together well and serve while hot.
Makes a great side dish!
