It’s time to get ready for BBQ season; warm weather has finally hit Salt Lake City, yay! I love salsa in the summer. Made with fresh ingredients from the garden, it’s unbeatable! I know fruit salsa isn’t completely novel, but it sure is good! It’s worth suggesting once again, and I like peaches, so why not? Super easy and great on fish tacos, grilled tri tip, tossed in a green salad, or simply with organic corn chips. And of course I’m into easy and healthy so here’s my take.
Peach Salsa
(Makes 5 – 6 cups)
Ingredients:
- 4-5 ripe peaches diced
- 4-5 ripe avocados diced
- 4 green onions finely sliced
- Juice of one juicy lime, or more if needed
- Salt and pepper to taste
- 1 clove finely chopped garlic, you can also use garlic infused olive oil
- Generous handful cilantro chopped
- 1-2 finely diced jalapeno peppers
- Some chopped mango and/or some chopped tomato to taste, optional
Directions:
Simply cut all your fruit and place in a large bowl, add your lime juice, onion, cilantro, jalapeno, garlic, salt & pepper, and optional mango and tomato. Carefully fold together, cover and allow to chill for about 20 minutes in the fridge. Eat up!
